How comes Apple doesn't make O2 write to the sim like AT&T. I've tried the method of putting the iPhone sim in a regular phone and creating a new contact called "Own Number" with my phone number and writing it to the sim but it still won't show up in iTunes.

I had the same problem, except my phone is an AT&T iPhone from an Apple store. I was able to resolve the problem with an old Motorola V-series phone. Menu>Settings>Phone Status>My Tel. Numbers and then input my phone number into the first spot. I know not all phones can do this and I'm pretty sure your numbers are stored separately from the contacts.
