Photos not showing all stored photos on 10.1.1

I recently hit a bug on my iPhone 6 running 10.1.1 where iTunes will say I loaded 124 photos to my phone, but the device only shows 80 or so. The assigned folder seems to be stuck on a date range starting back in May, ignoring any photos that were taken earlier.

So far, I've deleted the iPod Photo Cache folder twice, and even did a complete reinstall of the OS on my phone to no avail. No idea why it's doing this now. Anyone have any ideas?
