I really hate Adobe's subscription model and wish they would offer a paid version where you can have and use the app like how it used to be. Is there a way to get this app without having to sign up for a subscription?

Nope, Adobe doesn't offer any other way to purchase Photoshop. My advice is to find a competitor app and use that
