I am thinking about buying custom MacBook pro. I will travel in Dubai soon. Can I build a configuration on Apple website and set one of apple stores as the delivery point? I expect to see a specific pickup option for the shopping bag on checkout, but there's no such thing. Anybody had a similar challenge?

Don't think you can.
For example, if shopping in US Apple Store, can specify any US Apple Store for pickup, but not one outside of US.
(In this example, think you need to select the model, change the Apple Store to one you want to pick up at in US, then customize)
Can switch to different county Apple Store but will need payment type for that country.
And all this assumes that estimates you get at order time are correct and or no hiccups in supply chain or shipping.
