playing video as only audio on the iphone

one of my favorite iPhone feature is the ability to play video podcasts as just audio. But I want that feature for other video such as movies and tv shows too. Is the only way to do this to make the video a music video? I love my phone and itunes but this concept of conversion and tagging is much more complex than it needs to be. I end up with multiple versions of the same file in order to listen to things as I like and spend more time converting and tagging then I do watching or listening
