I'm trying to pair a new (to me) Apple Watch series 6 to my iPhone 13Pro on iOS 15.6.1

When I try to pair the watch, a message comes up saying

"iPhone out of date, This Apple watch requires a newer version of iOS"

All info on the web say (obviously) to update my phone, but as I'm running on the latest version, I'm unable to so why does the watch ask for a newer version?
Anyway has anyone else experienced this and how did you rectify it?

Just to note my Apple Watch I'm changing from still pairs fine with my phone, so it appears to me to be a watch issue and not a phone issue.
 
Sounds like the Watch is on watchOS 9 beta. You can either wait until iOS 16 is released or update the phone to the public beta release

I've returned the watch now and paired up my original AW.
