iOS and iPadOS don't support sub-pixel scaling.
Don't they? Changing the font size in settings or pinching to zoom works wonderfully in iOS. I've always wondered why Mac scaling can't work as well as iOS scaling; it's hard to believe they're one and the same.

IIRC they don't. iPhones and iPads have been equipped with retina displays for ages, and the increased resolution compensates the lack of sub-pixel scaling. That's in contrast with the Mac, until recently we still had some Macs with non-retina displays, where the difference between having sub-pixel font smoothing and not having it was more notable. This also applies to external displays with lower resolution. In macOS Mojave Apple introduced "refinements" by removing sub-pixel font smoothing, so as to allow Catalyst apps on the Mac.

Idk man, even on my 5K display, if I go above 200% quality falls off pretty fast. Maybe I never paid enough attention to this on the iPhone; I don't use it scaled up, after all.

Anyway, even if they've got to stick with integer scaling, they must have at least added support for 300% scaling like on iOS, right? R… right?
