I just had a new hard drive installed in my iMac (210 27" 2.93 ghz i7) and have set up iTunes with iCloud account etc. How do I point it to my large (more than 1TB!) library on my external drive?

The easiest way is to hold the option key when opening iTunes. Then, select your external destination as the default library.
 
perfect! thanks! I'm not seeing an iTunes Library file there. There is the iTunes Media folder though. I wonder if the Library file might have been on my internal drive, though the media folder was/is on the external?
 
You can also follow the same procedure and store the library on a Network volume such as a NAS.

Pressing the Option key also works with iPhoto allowing you to select different iPhoto libraries

That is quite possible. In which case, hopefully you have a backup or the old drive to recover it from.
