Just noticed this... the polling interval of airtags (when they look to connect to anything to update location) is about 15 minutes. If you open FindMy and just pull up your list, many items will show "15 minutes ago". When you pull up the item list, then it will actively start looking. It will still take about 15 minutes for it to auto ping to a nearby iDevice for the FindMy network to update. Then it will start more actively pinging out to the network so it can be found.

This is obviously a battery saving feature. SO... if you lose an airtag and are out of BT and of course UWB range, and have to rely on the FindMy Network.. it's about a 15 min wait minimum to have a -chance- at finding it from a nearby iPhone. If your item isn't near an iPhone (like a sparsely populated area) it could move 15, 30, or more minutes before it's located.
