Hello there. I just got a new 16inch MacBook Pro and my initial battery capacity readings are a bit worrying:

It seems, the full design capacity is 8790 mAh, while mine only readys 7950 mAh. I already tried recalibrating it by completely draining/recharging the MacBook, but it still shows this unusually low value. I do not really want to just give up 10% battery capacity from the start...I wonder if this is normal, or did I just have bad luck?

You're not the first to post something like that here.

These 16"ers seem to have pretty bad battery health. Most people posting have never had 100% health to begin with, a lot of people with 95-97% from new, and a few like yours.

Mine has been 97-99% with it only hitting 100% twice. 9 cycles on mine.

Getting the 10 hours use advertised, but can't remember the last time I had an Apple product that didn't have over 100%.

I'd wait a few days before worrying. My designed capacity is 8790 and now, after several months, it's showing a charged capacity of 8860 after 17 cycles. If it doesn't improve you might consider swapping it out before the 15 days is up.

What did the health start out at?

Apple doesn't recommend you calibrate your battery anymore...haven't in a while.

In fact they recommend not letting it get below 10%.

Which software is that?

I just checked iStat on mine and it says 8761 of 8790 mAh with 2 cycles, so I'm not worried.
