I'm hearing a short pop/double pop or click sound when skipping tracks, pausing/playing music on Google Play Music, skip songs on spotify, or even when I switch back and forth from different YouTube videos. I'm hearing it through the speakers and when using headphones so it doesn't appear to be a speaker problem. Anyone experience or know if this is normal? I tried the same with my android phone and I don't hear anything while skipping tracks or skipping through YouYube videos. It's just silence when transitioning to a new song or when pausing/playing. Funny thing is that I don't hear it when I skip through my ringtones/notification sounds in the settings menu or when I skip tracks on the default apple music player.

I also hear something similar a few seconds after I exit out of the music apps, including the apple music one.

Sounds like the audio is engaging and disengaging...

Any ideas?

The same here and on my wife's iPhone, too. I think this is standard functionality of iPhones. I am also coming from Android but there everything is more app based. In iOS on the other hand, many features are OS-wide. So I think this is normal. You'll get used to it. Like to many other iOS peculiarities...
