Which way is faster, porting data with new and old phones side by side or wired via Itunes from back up?
 
I've had some weird issues with quick start data transfer as some may experienced as well. During the data hand over, it oddly added a wrong iTunes account from someone else and I couldn't get rid of or finish the data migration. since then, I don't even get bothered to try it ever again. I usually create a back up on my iTunes and restore from back up when I get my new phone.

Would second this... Had weird battery drain issues with an iPhone 11 setup with quick start. Eventually got tired of the issue, couldn't resolve it, and set up from a local iTunes backup, which went flawlessly.
 
I use the Quick-Start method from the link above but connect the devices directly together:


Transfer data directly from one iPhone or iPad to another
If your current iPhone or iPad is using iOS 12.4 or later or iPadOS, you can use device-to-device migration to transfer data directly from your previous device to your new one. You can do this wirelessly, or by connecting the devices together with a cable.
