The title says it all. If my MacBook is not connected to the Internet but I want to get an attached doc from Mail on my iPhone, is there a way this can be done via sync or some other method?

This is easy. If you have an app like "Mailer" installed: tap the attachment and select "Open in... Mailer". The attachment/document will then be added to Mailers Documents folder. You can access this folder from you MacBook when the iPhone is conntected to iTunes. Select the iPhone, then the tab "Apps", then scroll down to "File Sharing" and select the Mailer app.

This may also work in any other file sharing aware app.
