My wife and I are on the Verizon plan. I am looking to surprise her and get her the iPhone 7 on launch date.

Will it be possible to buy it at either Verizon, the Apple Store, or Best Buy and not have them open the box nor activate it on the spot so that she does not lose service until she gets it?
 
It's possible at Best Buy. I've done that for lots of people. We do that even during Christmas time. The new device has to be activated so just request that the old device is turnt back on, and they will be able to do that. Don't take no as an answer. And they don't even need to take out the phone to do that either. Make sure you advise anywhere you go that they don't break open the seal.
 
It is possible with two of the three options. If you elect to pay full price, then Best Buy/Apple will let you walk out with the box unopened. i'm not too sure about Verizon.
 
With Verizon orders i usually just activate it when I'm ready. Especially around the holidays.
