I want to get a 15" rMBP with upgraded RAM (16gb). Is it possible to purchase one in person at an apple store, or do I need to get a BTO via the online store? Call me impatient but when I spend this money I like to have it right away. What are the different options for upgrades if I want to purchase it at a physical store?
 
You can pick it up in-store, but it's not any faster than having it shipped to you.

The two options that are kept on shelves (currently) are the 2.4/8/256 and the upgraded 2.7/16/512.
 
Apple typically stocks models with 16GB RAM at the local store. They may not have the maxed out 2.8/758/16 version, however.
