iPod touch Possible to recover app content from backup file without iPod?

I'm having problems with my iPod Touch, as noted in <https://forums.macrumors.com/threads/1340731/>.

However, if it turns out that the iPod itself isn't salvageable, is there some way to recover the content I had written on it (within the Notes app) using the last backup (saved via iTunes on my MacBook Pro)? Even if it's in some other format?

There were some sentimental scribblings in there that I would like to keep, if possible.
