Possible to restore without updating iOS?

im on the verge of buying a 4S from ebay. I want to wait for a while (given that i like the google-powered maps as it is) before updating to iOS 6.

Is it possible to restore an iPhone, (as i'd have to do) without updating from 5 to 6? I did notice that, until i updated iTunes on friday, my current phone wasnt being offered iOS 6, but still 5.1.1. (I'd still not updated to 5.1.1).
