Well I just put 4 gigs into my Unibody Pro, But I'm noticing at startup the mac is already using around 700mb of it, this is way more than it did with only 2gigs. It seems to be rivaling VISTA here! Any thoughts?

Since you have more available RAM the system is using it for cache. If the system needs more RAM it will release it.
 
total nube to Mac, sooo forgive my ignorance ; ) Now what about my start up disc, should I just select my main drive - that being Macintosh HD?

Yep, you normally don't have to mess with that unless your running Bootcamp or want to boot from a disc. It normally defaults to the partition containing your system folder.
