I don't mind the looks of iOS7. In fact, I like many things (aesthetically speaking) about it. What kills it, for me, are the colors chosen (the most childish and cartoonish around, as far as mobile operating system launchers go) and, much more importantly, legibility which is pretty poor on iOS7. From a "usability" (readability, clarity, sense of depth and space) point of view iOS6 wins hands down.
Agreed parts of iOS 7 look nice. On the whole though iOS 6 looks more professional and 'grown up' imo. I've spent a lot of time with iOS 7 now and can't help feel it's better suited aesthetically to children and teenagers. Also, as you say iOS 7 is not as easy to read, especially for long periods. The white-nes gets tiring after a while.
This could be the first time I am not wanting to upgrade my iphone as I don't want to be stuck with iOS 7. If I keep my iOS 6 ipsw could I always revert back to this even if I get the iphone 5s/6 that comes pre-installed with iOS 7?
No and AFAIK you can't even downgrade to iOS6 on your current device once iOS7 comes out. IIRC you would need SHSH blobs, JB and an A4 powered iDevice to be able to do so.
Holding out on updates, anyway, works only for so long, in my experience. Sooner or later current versions of software/operating systems will get some feature or improvement that you will definitely want/need and you will then begrudgingly take the plunge...
For example, there are a couple of Android apps I have not updated and I keep the APKs of the versions that I prefer but one of them has got so many new features in the latest updates (while it still has the one change that I hate) that I am about to update anyway.
Same thing with Windows 8. I have a non-touch notebook and I am still on Windows 7 Ultimate despite the improvements on the "desktop side" of Windows 8. With the 8.1 update Windows 8 is going to get another slew of "niceties" and I will most probably relent and update...
On my iPad 3 I updated to iOS 6 but managed to go back to iOS 5 until google maps was released in the App Store. Why would it be any different this time around?
I read it somewhere, they changed something in iOS6 and/or in the system in general (remember your iDevice must be "authorized/activated" by Apple servers). IIRC, I may be wrong.

As my home background might suggest I am not exactly one of Apple's biggest fans
I have a Note II since 6 months (and had an OG Note for 15 months) on rooted stock Touchwiz Android Jelly Bean and a i5, 8GB RAM, 512GB SSD, 15,6" LED Acer notebook running Windows 7 Ultimate and couldn't be happier with this arrangement. The only type of device I "experiment" with these days is tablets, I have yet to find a good one for me. I have gone through several Android and Windows ones and am now trying the iPad 4 (since 2 months). The ONLY thing which I LOVE about it is its display. It's not just the quality (top notch but the Nexus 10's is just as good), it's its dimensions and *aspect ratio*. Apple really *nailed it* going with a 9.7" 4:3 display!! I really wish there was a good Android tablet with this aspect ratio!!
What I don't like is its weight, the feel of its metal back (yeah, I am a HUGE fan of good quality polycarbonate/rubber!!) and, above all, its operating system! I consider myself a knowledgeable poweruser and iOS really is too limited and overly dumbed down for me...
Take this example: the thing most discussed about iOS7 is, more or less, its icons because what Apple chooses now is what you are going to be stuck with. On Android that would be a simple "icon pack" (no root needed)!!!!
Why is everyone posting screenshots when all phones look the same. This isnt jb screenshot section. Post your wallpapers instead.
I get it that you can't understand how someone can live without a jailbreak but spare us so we can continue our miserable survival
Screenshots give you an idea of how the wallpapers look with icons on them....and how the dock renders. Loosen the stick you've got a little bit man.
Docks look gross on some wallpapers.

Simple things like displaying the icons properly (notice how Chrome is displayed, I even uninstalled and reinstalled it) or recognizing the timezone (and trying to set it manually make the settings "app" hang) do not work or the gestures stop working coming out of the multitasking switcher and could go on and on... These are VERY BASIC things and that's why it definitely feels like an alpha.
Obvious dumb user btw.
