Im looking at producing hd videos of dancers doing instructional videos - i would like a pov (point of view) shot of their feet.

How could i go about this?

they perform facing away from cam (repeat the dance twice - 1 front on, second rear) - so shot of the back of their legs

go very close to them holding cam under their chin and track their movement - risk of hitting them with cam, maybe shaky shots

Use basic Jib - dangle this over the performers head,

Camera on their head, again maybe shaky, low quality

I would say GoProHD but that depends on your lighting. I just got mine and tested it at a gig (classic rock band) for ****** and giggles.
Audio was impressive even enclosed in the water-proof case.
Try www.gopro.com!

look good,

can you get an extension bar for the helmet, so it sticks out and can you point the cam down (so -90degrees)

They sell a mount for a tripod.
You'd have to retro-fit your own.
Judging from others out there in the field, its common to make your own parts that work :)
Its a widely used camera in extreme sports.
