So Im borrowing a MacBook Air from a Canadian mate and Ive lost her charger. Am I able to use a spare Australian one that I have or will I damage the laptop somehow plugging it in? Do the chargers / Mac's have different frequencies depending on where you buy them?

Apple and most other modern chargers automatically adjust to different voltages and frequencies. Apple ships the same basic charger worldwide, only the wall plug is different. Have used mine in Europe and South America with no problem.
