I bought a Power Mac G5 about 6 months ago and it is dual 2.5ghz. I was wondering if it were possible to upgrade to quad core? If so, is a new motherboard required or just another processor?

Not worth to upgrade the CPU as they are no longer made so you can only find used ones for pretty high price.

You can buy a new motherboard and use the case etc to build a PC and then Hackintosh it. Doubt you can find a Mac Pro mobo for reasonable price

Do Mac G5's only support DDR ram or does it support better RAM like DDR2 and DDR3?

all models before the late 2005 offering only support DDR, the late 2005 supports DDR2, none of them will support DDR3, and you cant mix and match DDR and DDR2 in the same machine ;)
