Looking at various threads on the battery life of the MBP 14", particular with the M1 Max, it seems that these machines probably can't be guaranteed to make it through a full day (8-12 hours) without plugging in. Some events (e.g. conferences, long-haul travel) make it hard to plug-in sometimes, so I was wondering whether a powerbank would be a good solution for these situations.

Can anyone recommend a model that would power a 14" MBP for about 2 hours of moderate load?

If you don't need high performance during these events you can save a lot of battery by simply switching to low power mode.

Any decent USB-C PD power bank should be suitable but those with lower output won't really charge when in use but will prevent the battery from draining - You could go all in and get like an Ankker PowerCore+ 26800 which will let you charge at 45W and double the run time of the 14" model or down from there depending on your budget.

I ordered this... waiting to come soon in December 2021. 100w PD charging and passthrough as well.
