I could be wrong, but if I remember correctly those DualDrive adapters only work for adding another hard-drive for storage, I don't believe you can boot from them, except for some occasions.
 
Hi. That is actually exactly what I want to do- have the SATA drive be a storage drive. But now the main OS drive (IDE) is not booting unless the DualDrive Sata is plugged in
Have you tried booting the mac while holding the alt key to select the drive to boot from?
 
This sounds like a jumper issue. Is the IDE drive the one with OS X installed? If so, check and see if you can use "Cable Select" on both the DualDrive and the boot drive.
