I placed an order for an iPhone 8 and an Apple Watch with cellular. I bought the wrong Watch so I had to order another one (with sport loop). The 10 minute difference meant that the loop Watch was already sold out for launch day. Both of my orders have already gone to processing. Is that perhaps a good sign? Also, I wonder why my order that is for pick up at the Apple store has already processed on my credit card. I thought that usually happens in store? Any insight would be lovely!

I also got charged and I am picking up from Apple store hopefully.

Is it a good sign that both are processing? Sign of what? If you mean will you get the watch on launch day. Probably not. The delivery date range on the order screen is usually very accurate for Apple.

You only 'pay' in store for you phone if you have reserved e.g. for IUP.
