SO if I order from Apple.com tomorrow and have it shipped to my workplace, will Fedex/UPS require that myself and ONLY myself sign? Or can our admin assistant sign for the phone? Anybody experience this with the 3GS last year?

I think anyone can sign. You could also file a signature release form with FedEx to eliminate having to sign altogether.

Any responsible person can sign for it. That's never been a problem.
