I'm confused. I know I can "pre-order" tonight, and the watch starts shipping on the 21st, but when is it actually available in the Apple Store? Would that be tomorrow, or the 21st? I can't find that on the Apple Site.

Pre-ordering starts on the 14th, you *cannot* pick up the device until the 21st of the following Friday. It will start delivering on the 21st via carriers.
Yes, I have been by the Apple Store here when they've released something, and it's a MOB! I think that's what I'll do, is have it delivered here at home, probably either come the day of the release, or next day, unless it's back ordered.
