My iMac's hard drive died, I gor a new one, restored most of my stuff with Time Machine, but there are still photos, app data, music, and other things on my iPhone and iPad (and they were on the iMac but it's obviously on there anymore) that were added AFTER my latest Time Machine backup of my computer. It's stuff I can't lose. My iDevices were always set to "automatic sync", but I need to plug them in to my computer without them syncing. Is there a button I need to hold down or something that'll allow me to bypass the auto-sync? Also, do you have any other tips that could help me get my data back?

So far I think I'm going to plug them in, not sync yet, click "transfer purchases" to get my music on the computer, and then... I have no idea. I need to get photos off of the devices and on to my computer, but to my knowledge the only photos you can do that with are the Camera Roll ones. Otherwise, it'll delete the photos off the device to match the iMac's photo library. Does anyone have any ideas? I'd really really appreciate it.
