I have my iPhone mail app setup to a GMail exchange account. I have deleted an email and now I can't find it in the trash folder so I assume it's gone.

Is there a way to set it up so it puts it in the trash folder or am I missing something?
 
When you trash a Gmail message on your iPhone, Gmail doesn't actually delete your email, it just archives it. The easiest way to find your lost message is to check the "all mail" folder on your computer or just search for whatever the subject was. The only remedy to this that I've found is that when you move your messages to a different "folder" on your phone, Gmail applies the appropriate tag and archives it.

Anymore I just leave all the mail I want to delete in my inbox until I can make it to a computer to send them to the trash as usual.
