Can I insert an image or more than one image into a folder icon, (like overlaying the image onto the folder icon itself) so I can see some of the data that is in that folder before I click on it? I think I did this with Windows years ago and not sure which OS it was but can I do this in El Capitan and Yosemite?
 
Unfortunately no, but you can try Tags instead if you're facing a data mess.
It relates to privacy concerns + ACL permissions
 
fortunately yes, I found a YouTube Video -

that explains how to do it, but the image inside the folder icon is blurry and pixelated despite the aspect ratio being perfectly sized for it to be a clear image. Not sure why this is happening here.
 
I'm not seeing how this is very useful, since 1. you have to manually paste an image (it's not actualy giving you a preview of the files inside), and 2. it makes folders look like files instead (confusing). Maybe I'm totally missing what you're trying to do here.
 
my Viber sticker collection is messed up and automatically producing duplicate folders that continuously reload the same sticker sets. So I'm going through them to produce one main folder with all sticker sets and delete the duplicates so I need to choose only 1 png sticker image to know what the whole folder consists of.

I didn't follow that at all, but I'm glad you know what you're doing and that the video on YouTube is helping you achieve your goal!
