Anyone know what it means?

When you print on a printer that is a hard proof. That output lets see you the colors the printer will produce. A soft proof is displaying on a monitor but as the colors would be on the printer.

So what's it displaying when Soft Proof isn't checked?

Sorry, it's when you go Print..., and click the Preview button and it opens it up in Preview.

It's showing you the output using your monitors color profile.
