How can I stop preview automatically saving any changes or adjustments I make to pictures - in the old days it would ask if I wanted to save changes...but not any more it seems?

Since the introduction of Versions, all your changes are automatically saved as incremental updates. You may revert to any state of the picture by clicking File > Revert to...
