Is there a way to know what data an application accesses, and when it does so?

Is there a way to block it?

A firewall application for the iphone?

I know that you can turn off the GPS, globally, or "block" it when an application asks to access your location.

I saw an article a few days ago that said there is quite a bit of personal info that apps can access via published API.
 
This is exactly what I was looking for, but I haven't JB'd my phone (3GS w/3.1.2).

I don't suppose anybody knows of a similar app from the App Store.

Wonder what Apple would tell me why this functionality isn't a part of the OS.
