Problems with email on MacBook Pro

I have a MacBook Pro 2010 edition. OS is 10.6.6 . I'm using Mail version 4.4 . I have several email accounts. I am uncertain as to how to setup a default email. I have tried dragging the account that I want as default mail to the top of the list but it doesn't stay. Every time I send email I have to make sure to remember to change the account before sending. Is there an easier way?
