Problems with Microsoft Word formatting

I've got Word 08 and use the Notebook Layout view with audio recording to take notes in class. It's a pretty awesome feature and I use Word instead of Pages just because of this feature. However, I'm having some problems formatting the notes. I go to format, bullets and numbering, and select a format. When I type, though, I can't tab over to indicate a subcategory (ie. Section 1, then point A, B, C). When I press tab, nothing happens at all. Can anyone help me out with this? It's really frustrating and any help would be greatly appreciated.
