‌‌Problem 1: watchOS 7.0.2‌‌ will not verify to update my apple watch series 5 when it is connected to internet but says it is not.
Problem 2: In the exercise mode it gives me credit for about 1 minute of exercise when walking for 6min. So about 6 min of exercise for 36 minutes of walking. My heart rate is definitely up and other exercises seem to record correctly.

Problem 1:

Hard reset your Apple Watch By holding down the digital crown and power button for 10 seconds until you see the Apple logo. Re-pair The watch to your iPhone and then re-enable Wi-Fi. If that doesn’t work, send it direct to Apple for a hardwired reboot through the diagnostic port.

Isn’t that normal for walking? I‘m a runner and I always get full credit for running but about 1/6 for walking.

For me on previous watch OS releases this can be normal, walking often has to be at serious pace before I start getting solid minutes recorded. Can't comment much on the very latest 7.0.2 version in relation to this though.

Aah. That’s true. I walked with my dad once. Got about 50% of my actual workout time.
I usually walk 1km with my wife in about 9:30 so I get credit for every minute of the workout walk

Very much so, whilst recovering from an injury in 2018 I was walking the same route most days and initially all my minutes got recorded, after a few months I had to almost speed walk to get anything meaningful logged in the health app due to lower heart rate :)
