Problems with Outlook Mac 2011

I have several accounts on my outlook, and when one of my account is offline, my outlook automatically sends the e-mail with another server. That is giving a major headache, because I work for different companies, and clients are sending me e-mail to company A and outlook is responding with company B.

Is there a way to prevent that?
