I ran the Snow Leopard update, rather than clean install, on 3 machines. Went well on two (iMac 2008, Macbook Air Rev. A), but did not seem to run well on my MacPro 1,1. Looked at the console, All Messages, and saw these two processes that were running constantly:

I ran the uninstaller for both VMWare Fusion and Little Snitch, now my MacPro runs fine with SL.
If you find that the machine is running poorly, my advice is to look at the console messages and see if there is a launchd process that is constantly running. If so, uninstall the program, and that might fix SL for you. Or, conversely, if you have installed a lot of software, perhaps a clean install is a better way to go.
