I have been reading about FileVault but I am not sure if it meets (it probably exceeds) my requirements.

Basically, I am always forgetting login details for online banking, etc and so I have a collection of text files with these details in my documents folder. I want to somehow password protect these files (or maybe put them in a folder and password-protect that folder). What's the best way to do this?

Create a disk image in Disk Utility and encrypt it with a password. Don't let Keychain remember the password. This uses the same encryption as FileVault, but doesn't have the nasty bugs. FileVault is pretty dodgy and there are quite a few threads 'round here with people losing all their data. There shouldn't be any need to encrypt an entire user folder. :)
