I'm about to convert a server to a system similar to the one described here. Basically, it's a ProxMox hypervisor with a macOS virtual machine. ProxMox has a web interface like ESXi, but underneath it's a Linux distro. So I can set it up to be the server for the network drives as well. The advantage? I can reuse hardware that I already have and it'll serve two purposes instead of one. The other option was using this server purely to serve files, then to buy a mac mini.
Now that I've found this route, I was wondering if the same would be possible on a laptop? Nick Sherlock uses a GPU card that he passes through directly to the macOS VM. Would it be possible to pass through a dGPU of a laptop directly to a macOS VM? Same question for possible Wi-Fi plug-in cards to get AirDrop and such.
