I tried to get my PS3 paired up with my Mac a while back and could never get it going. I had to turn off all my bluetooth devices keyboard/trackpad etc and it was just too complicated. Is there a simple updated driver out there that is a bit easier?

It doesn't matter if its wired via USB

I've got it working a few times but I've always had to re-do the setup process every time I turned the controller back on. Is it supposed to be like that, or am I doing something wrong?

I've done this but not had a chance to try it out :)
I'm playing some Super Mario Bro's :D

Nah shouldn't have to redo it every time. I just plug mine into the USB wait couple sec for it to show up under Bluetooth, hit PS button, unplug and I'm good to go.
