I feel like I should be taking advantage of the fact I could easily (and cheaply) upgrade my 80GB HDD to 160GB or more.

The thing is - I am not sure how I'd take advantage of it. My music is all in iTunes, and so that makes it difficult to stream over. TV shows and (some) movies as well. I delete the game data (but not the saves) after I am done with a game. I have a few downloaded PSN games, but not enough so that I am in a space crunch. So what am I missing?

What do you have on your PS3?
 
128gb SSD in my Slim
320gb HDD in my Fat Euro
160gb HDD in my Fat USA

mostly just game saves & installs. About 30gb of music on the 320 machine.
 
320GB drive in my launch 60GB, with PSN games, saves and that's about it. 250GB drive in my Slim (as shipped), with saves and less PSN games (CBA to re-download a lot of them).

I don't delete games, but I do delete demos, videos etc. when done with them.
