Ok, I have asked my share of noob server questions on this forum that were so basic, nobody answered. Despite knowing nothing about servers, I messed around with Lion Server and the guide linked below and now have my server up and running with iCal, Address book, web page, etc., in the span of about 3 evenings.
It is currently only for Snow Leopard Server, but most of the things are analogous in Lion Server, at least to the point that with trial and error, I think it should be doable for most people. This site is going to be updated soon with a Lion specific guide. I would also suggest using this guide in conjunction with the documentation on Apple's site, although it is not as specific as to what to do as the guide below.
