So I will be purchasing "two" 5s tomorrow, but I will not have my fiancé Sim on hand. Will This be an issue ?. I will be buying both at an Apple store but We have our cellular provider with AT&T.
Could I buy her iphone and have her install her old 4s sim when I give it to her later in the day ?.

Nope, a 4S microSIM doesn't fit a 5s which uses a nanoSIM.

Are you two on a family plan with you as the account holder? If so, they'll activate her phone on a new nanoSIM and you'll walk out of the store with the phone fully functional. Do tell her that her existing will quit working, so she shouldn't expect to make calls until she gets her new phone.
