I have a guy local to me that is selling his liquid damaged 2016 13" i7 500gb MBP for $250, Apple quoted him $700 for a logic board replacement and that is all that's wrong. I'm pretty sure that can talk him down to $200, my question is, would/can this be a good investment? I plan on sending it off to Rossmann to have it fixed. What are your takes on it? Thanks in advance.
 
I'd pass on that, unless you think you could part it out for profit. But definitely not to repair and use. The cost to fix it might be higher than you are anticipating - so you are already approaching or passing the cost of one in perfect shape.

Also, that was probably the worst year of the butterfly keyboard. Would it still be covered after a third party repair?

You can do much better for the ~1,000 you would invest in that.
