What is the purpose of utilities like NTFS-3G?

According to their website, it is so Mac OS X can read / write NTFS partitions.

But, I can read NTFS fine on my Mac without any third-party app?

So, is a utility like this really just for writing to NTFS from a Mac?

Yes, OS X can't natively WRITE to NTFS but it can READ NTFS. Utilities like NTFS-3G allow write to NTFS.
