I tried the current version of the iPhone and was only able to get PUSH mail from our corporate exchange server to the inbox, I have tons of sub-folders, will the version 3 software be able to push all folders?

Yes, it will push sub-folders. You can actually choose which folders you want to push.
 
that is great news, had to return the previous one due to not being able to push sub folders.

Look forward to the new phone in a few weeks again.

Push from any folder will work, but I think it will only work with Exchange server 2007. Correct me if I am wrong. My Push e-mail folders do not get pushed from my Exchange 2003 server from what I can tell.

I am pretty sure (95%) that the push feature as well as some others does require Exchange 2007. Coincidently, to use Mail, iCal, and Address Book with an exchange account in Snow Leopard will require Exchange 2007 as well.
