All legalities aside, what would be the easiest way to rip all the episodes from, say, a season of seinfeld for personal use on an iPod?

I'd want all the episodes to be separate video files and have the right audio track (not the director's commentary, spanish version, etc;)

Put episodes from DVD onto iPod - Handbrake

I use HANDBRAKE - it is easy to use, free and has pre-sets for all kinds of video devices. You can queue all the episodes from DVD, and HANDBRAKE will convert them into separate files.
It takes about 45 mins to convert 1 hr video on my 2.2ghz / 4GB MacBook.

So put the DVD in, queue Handbrake to rip/copy the episodes, and your good to go?

Not to pester you, but could you give me a mini tutorial? I tried it before and it was the commentary version.
