Im installing a new SSD into my 27" 2010 imac alongside the original hard drive and the superdrive (not replacing anything). Since the original harddrive will remain in place, will I still have to resort to shorting the temperature sensor, or using software to control the fan speed?

No, only if you're replacing the spinning disk with the ssd, if you're adding along side you just need to install the SSD and you're good to go.
