If I do a remote wipe of the phone, will it force a ios6 update?

And/or since my iphone4s is JB, and I want to just to erase all my data so I can sell my phone, what's the best way to go about it? Goto each program and uninstall it? Or is there some other way that won't screw me up on my iphone5? I restored my iphone5 with my old iphone4s restore data, which went fine. I just don't want to screw up the new phone. :)
 
So did anybody try wiping there old 4s via remote yet after restoring to their iphone5? Did it work correctly and did it upgrade the 4s to ios6?
 
ok, I found out Find my iphone no longer finds my old iphone. I guess once they kill your old off the network, even with wi-fi, it drops offline.

So I guess my question comes down to, whats the best way to delete my data but not break the JB and/or NOT have it upgrade the ios to 6?
